JJ Pfister was a dream realized for Brian and his parents, Kevin and Gail, blending family heritage with craft, chemistry, and hospitality. The tasting room and distillery draw from the family’s San Francisco roots—particularly the JJ Pfister Knitting Company, known for producing the first wool female swimsuits on Polk and Ivy in the early 1900s—informing the palette, materials, and storytelling throughout. Navy, white, black, and brass establish a refined tone, while copper stills and curated displays of vintage swimsuits, catalogs, and posters connect past and present, with a logo that references a knitting machine to unify craftsmanship and distilling heritage. The layout balances production, guest experience, and storytelling, coordinating brewing and distilling equipment with the bar and museum-style displays to create a flexible, engaging environment. Locally sourced ingredients—including organic Klamath Basin potatoes—are highlighted within a setting that blends historic San Francisco character with a modern sensibility, resulting in a space where legacy, design, and production come together seamlessly.
