Monk’s Cellar emerged during a pivotal moment for Downtown Roseville as Vernon Street began its revitalization, transforming a historic structure—once subdivided into small retail shops—into a full kitchen, bar, restaurant, and brewery with open fermentation on display. The renovation addressed significant structural and code challenges, reinforcing floors for brewing equipment, introducing fire sprinklers, and resolving roof and ceiling deficiencies with a supplemental steel framework added from below, while preserving original brick and timber where possible and integrating a lift system to move kegs and equipment between levels. Today, Monk’s Cellar stands as a centerpiece in the brewing community, known for experimental beers, collaborative releases, and a culture rooted in traditional craft, inspired by owner Andy Klein’s experiences in Belgium. As one of the few breweries in California practicing open fermentation, the process is fully visible—an element of “mad science” woven into the experience—where copper kettles and fermentation tanks anchor the room beneath monastery-inspired arches and a vaulted clerestory ceiling. A custom sliding red door reinforces the brand, while salvaged wood from the renovation lives on in beer rails, shelving, and bar details—resulting in a welcoming, hardworking space that celebrates craft and contributes to the ongoing revival of Vernon Street.
